I made something similar for a while with Matcha and really found it satisfying. I tend to think you get more nutritional goodness from the Matcha because you are consuming the whole leaf, not just steeping it. But perhaps there is a reason you chose to steep Sencha instead? In fact, a lot of slightly more affordable matcha are made with the exact same leaves that are made into shade grown sencha and the even higher grade shade grown leaves are made into Gyokuro.
You can get really good shade grown sencha, aka Kabusecha, for less than half the price of Matcha or Gyokuro.
